This raw kale and quinoa salad is full of healthy ingredients. It offers more than a day’s worth of vitamins A, C and K and is rich in fiber, heart-healthy fats, potassium and B vitamins. The quinoa is also a complete vegetarian protein. It is filling and easy to make. The tiny grains of quinoa absorb all the dressing for maximum flavor and the avocado adds a creaminess to contrast with the crunch of the kale.
Ingredients
1 cup cooked quinoa
¼ of an avocado, cubed
One carrot, shredded
1 cup raw kale, shredded
½ cup cucumber, thinly sliced
Dressing: ½ tbsp. olive oil blended with 1 ½ tbsp. balsamic vinegar, ¼ tsp. of salt and a tiny pinch of cayenne pepper
Toss the ingredients together with the dressing and serve. The salad contains about 420 calories, with 12 g of fiber, 12 g of protein and 18 g of fat. If you have a light appetite, eat just half!
